Ingredients
- 6 ribs diced
- 3/4 yellow onion chopped
- 2 cloves garlic minced, fresh
- 3 cups broccoli chopped (fresh or frozen)
- 2 tbsp olive oil extra virgin
- 1/2 cup BBQ Sauce We use Stubbs
- 1.5 cups quinoa or any grain of your choice
- Parmesan cheese for topping
- crushed red pepper for seasoning

Instructions
- Add Olive Oil to a skillet, heat it up and throw in the onion. Once the onion is about half way done sautéing, add in your minced garlic and cook until onions are translucent
- Add your chopped broccoli and diced rib meat to the skillet next. **If you are using fresh broccoli, add to the pan when you add the onion** Cook for a few more minutes.
- Add in your BBQ sauce next as well as any additional seasonings. I added in crushed red pepper and black pepper as we like spicy in our house!
- Reduce the pan to simmer, cover and let it cook for about 10 -15 minutes stirring occasionally.
- Add your cooked grains to the pan and adjust BBQ sauce and seasoning accordingly.
- Serve it up and top with grated Parmesan before devouring. 🙂
