  1. Bring a large pot of water to boil for pasta. Cook according to package.
  2. In a large skillet, heat up olive oil. Once pan is warm, add in minced garlic and cook until fragrant (about 2 minutes). Then add in mushrooms and cook for another 2 minutes.
  3. Add the rest of the ingredients (except for the greens) to the pan. Simmer for 5-8 minutes, stirring occasionally. Once all the ingredients are warm, add in greens and cook until wilted.
  4. Add in pasta, mix to combine and serve.

Instructions
  1. Preheat oven to 375 degrees and grease a 9x13 baking pan with coconut oil or butter.
  2. Mix all of the ingredients in a large bowl. Make sure to mix well so that the egg and seasonings are evenly dispersed.
  3. On a cutting board, or in the baking pan, form the meat into a football shaped ball.
  4. Place the meatloaf pan in the oven and bake for 1-1.5 hours.
