Hi Guys! If you’re anything like me, sometimes Monday’s can be a little bit of a rude awakening! You know what makes them better though? Having something awesome to look forward to at the end of the work day. So lucky for you, I’m providing you with something to look forward to today – a delicious treat you can bake yourself tonight and continue enjoying for the rest of the week. And guess what?? It’s good for you too! 😉
So a little trivia about me: I have a slight obsession with food in bar form – so in hopes of cutting down on my struggle to find healthy food bars and also the expense of healthy food bars, I created my own! This recipe is SUPER easy to make and, oh yeah, it has chocolate in it…

Ingredients
- 2 Cups Gluten Free Oats I used Trader Joe's
- 1 Heaping Scoop Vanilla Grass-fed Whey Protein Can sub for other protein powder
- 2 Tbs Ground Flaxseed
- 1.5 Tsp Ground Cinnamon
- 1/4 Tsp Salt
- 1/4 Cup Smooth Almond Butter
- 1/4 Cup Honey
- 1/2 Cup Unsweetened Vanilla Almond Milk
- 1 Tsp Vanilla Extract
- 1/3 Cup Nuts & Seeds I used chopped pecans & pepitas
- 1/3 Cup Dark Chocolate Chips I used Enjoy Life brand
Servings: bars
Instructions
- Preheat your oven to 350 degrees and grease an 8x8 baking pan with cooking spray or coconut oil.
- Combine honey, almond milk, almond butter and vanilla extract in a small bowl. Mix well so that all the ingredients blend together to form a smooth (watery) consistency.
- In a larger bowl, combine oats, flaxseed, protein powder, cinnamon, salt, and the nuts & seeds. Stir up until everything is well combined.
- Pour your wet ingredients into your dry ingredients and mix well. Once everything is combined, gently fold in your chocolate chips. Pour completed mixture evenly into the pan and press down firmly to pack down the batter.
- Bake for 18-22 minutes, or until the edges turn golden brown. Let them cool completely and cut into 12 bars.
Recipe Notes
And then you eat them up and love it! I cut them into squares and then individually wrap them in saran wrap and store them in the refrigerator to keep them fresh.
