I don’t know about you, but Fall is my absolute FAVORITE season. I’m obsessed with pretty much everything about it. The colors, the smells, the crispness in the air, the lazy Sunday’s, the boots, the sweaters, the comfort foods and the delicious produce – apples, squash and PUMPKIN…pumpkin everything! Yes, I am one of those people who are obsessed with all things Pumpkin Spice. It’s ok if you want to judge me, I’m fully confident in that aspect of my life. 😉 But with that being said, it just wouldn’t be right to not share a favorite pumpkin recipe of mine with you all this season….so today, I’m doing just that.
I love smoothies and protein shake bowls in the morning, but sometimes on these chilly Fall mornings it just seems mean to try to eat such a cold meal first thing in the morning. So on those days, I turn to warmer options. Now I usually go with eggs of some sort, but every once in awhile I get crazy and switch it up and THIS is a recipe from one of those cRaZy mornings! 😉 Ready to start your day with a delicious, warm bowl that tastes like Fall? I am! Let’s go!
- 1/2 Cup Gluten Free Oats
- 2/3 Cup Water Or milk
- 1 Tbsp Chia Seeds
- 3 Tbsp Egg Whites
- 1/4 Cup Canned Pumpkin Can use fresh if you have it
- 1/2 Tbsp Pure Maple Syrup **Optional
- 1 Dash Cinnamon
- 1 Dash Pumpkin Pie Spice
- 1/8 - 1/4 Cup Crushed Pecans & Raw Pumpkin Seeds For Topping
- Put your oats, water, pumpkin, spices and Chia seeds in a bowl and stir to combine.
- Microwave for 1 minute. Take bowl out of microwave and add in egg whites, syrup and more cinnamon if necessary.
- Place it back in the microwave for 1-1.5 minutes.
- Top it crushed pecans and pumpkin seeds and ENJOY!
