Berry Explosion Pancakes (Gluten & Dairy Free)

Happy Wednesday!  You may have seen this delicious breakfast I posted on Monday.    I don’t know about you, but with the weather getting cooler (too soon, too soon) my typical breakfast smoothie doesn’t always sound quite as appealing in the mornings.  I’m definitely starting to crave some warmer and ‘comfort-ish’ type breakfasts and meals.  That’s something that is so fun about having an intuitive relationship with food – as the seasons change, so do my cravings and meals.  Once you are attuned to your body’s cravings and cues it becomes much more exciting to get into the kitchen with fresh seasonal produce and come up with satisfying meals.  That is exactly how I originally came to make this pancake recipe!

I got a few requests to share the recipe after Monday’s post, so let’s get to it!  The awesome thing about this recipe is that it serves as a great “base recipe” meaning that there are so many different ways you can switch it up based on YOUR tastes and preferences that day.  I’ll post some of those options below…

Berry Explosion Protein Pancakes (Gluten & Dairy Free)

Ingredients
Servings: People
Instructions
  1. Whisk together all ingredients (except berries and ghee) in a bowl
  2. Heat a pan up with Ghee. Just enough so the batter doesn’t stick to the pan
  3. Once pan is hot, spoon on your batter and cook as you would any normal pancake.
  4. While pancakes are cooking, place berries in microwave for 20 seconds, take out and smoosh with a fork, add a dash of cinnamon and heat again until warm.
  5. Pour berry mixture over pancakes and ENJOY!
Recipe Notes

Variation Options

Pumpkin Protein Pancakes:

Add in ¼ cup canned pumpkin and increase cashew milk and egg whites amounts until the batter is thin enough to pour into pan. 

Oatmeal Protein Pancakes:

Add in 1/8 – ¼  cup of organic oats to the batter and adjust liquid accordingly.

Cinnamon Nut Pancakes:

Make batter and before flipping pancakes sprinkle on some chopped pecans or almonds.  Could also put pecans/almonds in berry topping.
