Instructions
  1. Preheat oven to 350 degrees and grease your muffin pan with coconut oil or butter.
  2. Place the oats and flaxseed in the food processor and pulse for about 20 seconds until it all resembles a flour consistency.
  3. Add remaining ingredients to food processor and process until everything is mixed together and there are no remaining chunks of banana or whole oats.
  4. If you are going to add in chocolate chips or nuts, stir them into the batter before separating into the 12 muffin tins.
  5. Bake for 18-20 minutes or until a toothpick comes out clean.

Instructions
  1. Whisk together all ingredients (except berries and ghee) in a bowl
  2. Heat a pan up with Ghee. Just enough so the batter doesn’t stick to the pan
  3. Once pan is hot, spoon on your batter and cook as you would any normal pancake.
  4. While pancakes are cooking, place berries in microwave for 20 seconds, take out and smoosh with a fork, add a dash of cinnamon and heat again until warm.
  5. Pour berry mixture over pancakes and ENJOY!
Recipe Notes

Variation Options

Pumpkin Protein Pancakes:

Add in ¼ cup canned pumpkin and increase cashew milk and egg whites amounts until the batter is thin enough to pour into pan. 

Oatmeal Protein Pancakes:

Add in 1/8 – ¼  cup of organic oats to the batter and adjust liquid accordingly.

Cinnamon Nut Pancakes:

Make batter and before flipping pancakes sprinkle on some chopped pecans or almonds.  Could also put pecans/almonds in berry topping.
