Instructions
  1. Bring a large pot of water to boil for pasta. Cook according to package.
  2. In a large skillet, heat up olive oil. Once pan is warm, add in minced garlic and cook until fragrant (about 2 minutes). Then add in mushrooms and cook for another 2 minutes.
  3. Add the rest of the ingredients (except for the greens) to the pan. Simmer for 5-8 minutes, stirring occasionally. Once all the ingredients are warm, add in greens and cook until wilted.
  4. Add in pasta, mix to combine and serve.

  1. Pre-heat your oven to 400 degrees & lightly grease an 8x10 baking dish with olive oil.
  2. In a medium bowl, mix together chicken, salsa, cabbage, seasonings and 1/2 of your cheese.
  3. Arrange the corn tortillas in your pan so that they are holding each other upright (I was able to fit 5, but it will depend on the size of your tortillas) and split the chicken mixture evenly between all of your shells. Then top the tacos with the remaining cheese.
  4. Bake tacos for 10-12 minutes and then top with your favorite taco add-ons. We topped ours with guacamole and hot sauce. Enjoy!

  1. Add Olive Oil to a skillet, heat it up and throw in the onion. Once the onion is about half way done sautéing, add in your minced garlic and cook until onions are translucent
  2. Add your chopped broccoli and diced rib meat to the skillet next. **If you are using fresh broccoli, add to the pan when you add the onion** Cook for a few more minutes.
  3. Add in your BBQ sauce next as well as any additional seasonings. I added in crushed red pepper and black pepper as we like spicy in our house!
  4. Reduce the pan to simmer, cover and let it cook for about 10 -15 minutes stirring occasionally.
  5. Add your cooked grains to the pan and adjust BBQ sauce and seasoning accordingly.
  6. Serve it up and top with grated Parmesan before devouring. 🙂
