Do you ever get sick of eating the same proteins? I do. I have to switch up my proteins throughout the week or else I will get bored with my meals. Every once in awhile I put my adventurous pants on and get proteins that I am not comfortable cooking with….that’s how I initially got introduced to ground bison meat. Thank God I was feeling adventurous enough to try bison because these stuffed mushrooms are now one of my FAVORITE meals! And hey, if you can’t seem to get yourself to feel too excited or courageous enough to try out bison, just sub it for ground beef or turkey and it will still be delicious. Snacks….I mean who doesn’t love snacks?? Snacks are great. Now, truth being told, I may be a little bit more into them now that I’m preggo, but I’ve always loved snacks for two reasons. 1. It gives me another excuse to eat delicious food and 2. It keeps me from being ravenous when meal times come = less over stuffing myself at meals. I have a slightly abnormal obsession with Mexican cuisine. I’ve noticed that I pretty much always try to make any new food with Mexican flavors….and (usually) never regret it. Garlic Powder + Cumin + Chili Powder = My ‘Go-To’ Spices for life. I also don’t have a lot of patience for making epic, multiple ingredient meals during the week, so anything I can do to have a delicious meal without a lot of prep time, cook time or 7 trips to the grocery store equals a win in my book! I don’t know about you, but Fall is my absolute FAVORITE season. I’m obsessed with pretty much everything about it. The colors, the smells, the crispness in the air, the lazy Sunday’s, the boots, the sweaters, the comfort foods and the delicious produce – apples, squash and PUMPKIN…pumpkin everything! Yes, I am one of those people who are obsessed with all things Pumpkin Spice. It’s ok if you want to judge me, I’m fully confident in that aspect of my life. 😉 But with that being said, it just wouldn’t be right to not share a favorite pumpkin recipe of mine with you all this season….so today, I’m doing just that.
Hi! How was your Holiday weekend? Did you do something super fun? I was able to escape for a couple of days to a Lake House with some friends and also got to celebrate one of my nephews’ 1st Birthday’s! It was such a re-energizing and amazing weekend!
